My all-time favourite cocktail is a Raspberry Bellini – fresh raspberries, Champagne, a little sugar and lemon juice are all you need for this light and fruity Raspberry Bellini recipe.
It’s perfect for a birthday celebration, bruch or served as a cocktail for your guests during your wedding drinks reception.
This recipe serves 6, to make it you will need:
- 1 cup frozen or fresh raspberries
- 1 teaspoon lemon juice
- 2 tablespoons granulated sugar
- 1 bottle fruity (not dry) Champagne or sparkling wine
Method:
- If using frozen raspberries defrost them first. Place in a blender with the lemon juice, sugar and about 1/2 cup of Champagne or sparkling wine. Blend until smooth.
- Pour through strainer to remove seeds.
- Pour about 4 tablespoons of raspberry puree mixture per champagne glass and fill with remaining Champagne/sparkling wine.
Top Tip: For a non-alcoholic version, replace the sparkling wine with sparkling apple juice.
