Start your weekend with an Autumn cocktail!  Gather some colleagues, family or friends together and celebrate the changing of the leaves and cooler temperatures with a Plum and Thyme Prosecco Smash cocktail.  Plums are coming to the end of the season in the UK and what better way to use them up than including them in a delicious cocktail.

The combination of plums, thyme and prosecco will make your taste buds sparkle, and, best of all, you can swap out the Prosecco for your favourite Champagne or sparkling water for an alcohol-free version.

Plum and thyme cocktail with sliced plums

To make these beauties, you will need the following:

  • 2 Plums
  • 6 Thyme Sprigs
  • Juice of 1 Lemon
  • 4 Tbsp. Thyme Simple Syrup (1/2 Cup of Sugar, 1/2 Cup of Water, bring to a boil, remove from heat, add thyme sprigs, stir, and let cool.  Chill until ready to use)
  • 1 Bottle of Prosecco or your favourite bubbly (sparkling water can be used as a substitute)

 

Method:

  • Peel and chop 2 plums.  Muddle the plums with the thyme simple syrup and lemon juice until all of the plum juices have been released.  (You can also muddle right in the glass if you prefer to have bits of fruit in your cocktail!). 
  • Shake with ice in a cocktail shaker.  Pour over crushed ice evenly between two glasses.  Top with prosecco and garnish with extra plum slices and thyme sprigs.  Serve immediately.
