The easing of restrictions (in England at least), being able to meet our friends and families again, albeit from a distance, and a return to a new ‘normal’ way of living is surely cause for celebration.
If like me, you’re not quite ready to venture out to your local pub, here’s a cocktail you can make at home. It’s a little sweet, a little bubbly and truly delicious.
If you’re looking for cocktail ideas for your next celebration, whether it’s a wedding, party or just because, you have to try it. Do you even really need a reason?!
This recipe serves 4. To make it, you will need:
Blackberry Syrup
- 1/3 cup blackberries, plus 8 more for garnish
- 1/3 cup water
- 1/3 cup sugar
In a small saucepan, add the blackberries, water and sugar and bring to a boil. Lower the heat and simmer for 10 minutes. Strain the blackberry mixture and allow to cool.
Cocktail
- A bottle of Prosecco, Champagne or Cava
- 4 sprigs for thyme for the garnish
Method:
- Add 2 tablespoons of the syrup to the bottom of each glass (you can use any glass for this cocktail).
- Top with Champagne/Prosecco/Cava and add a sprig of thyme and 2 blackberries to each glass.
